Say Cheese !!
I have always hesitated to use cheese in my cooking, mostly because cheese isn’t something you can see in traditional Vietnamese recipes. One top of that, the lack of knowledge pushed me even farther away from it. So why, when, what happened? The reason why I started using it was because of my colleague. She shared her favourite Italian 3 cheeses eggplant rolls with me during our lunch break. She came as far as buying all the ingredients for me since she knew how bad I was with cheese. So bad that I couldn’t buy it on my own.
The recipe includes 3 different types of cheese as stated in its name: Ricotta cheese, Mozzarella cheese, and Parmesan cheese. There is something about these 3 combinations that makes it go so well together. I definitely believe Ricotta is the “Knight” in this party of three. It’s the leader that put the team together and create a strong base. Parmesan, on the other hand, is a “Mage” who provides great strategies and diversification to the team; aka flavour. Last but not least, our Mozzarella is an irreplaceable “Healer” of the team. Without Mozzarella, the party wouldn’t able to stick together, literally.
Another thing that my fella Italian colleague insisted me to have was the meat. It wasn’t just normal meat. The one that she bought for me was a package of 3 different types of meat: pork, veal, and beef. At the time, I thought it was the way to enhance the flavour and texture of the meat, but I quickly found out it’s a cultural way to make the perfect Italian meatballs. The fact that she wanted me to make it this way proved how proud she was when it comes to cooking her cultural food.
Now, it would be a shame if I don’t mention the tomato sauce. To be completely honest, I used the can tomato sauce which was given in the groceries bag from my colleague. She said I could either make my own sauce or use her can tomato to try out. In my defense, I’m pretty new to Italian foods and I wanted to know how the dish taste like first before I go wild with it. I did added some white onion and basil leaves to upgrade the sauce to fit my taste.
