My first vegan recipe
I have become a bus taker since I got to Canada and I think it’s an amazing thing. It’s save me a whole lot of money and gives me some self-time before I get to where I want to be. I once read that a rich country isn’t the one that everyone has their own car but the one that has a supportive public transportation system which can get you to anywhere in the country.
One of my favourite things to do on the bus is listening to podcasts; especially, food podcasts. Gastropod is one of them. They has a great episode called “Kale of the Sea” published on December 2014 which lead to our post today. The episode talked about Kale and how we’ve started using it in our foods. I believe Kale will be our future food because of the positive health benefits and the good affects it has on our environment.
Over the last weekend, I tried to create a new dish which used Kales as one of the main ingredients since Kale was on sales. Hey, nothing better than great foods that fit my budget. I came up with the idea of making Kale Salad topped with noodles and cherry tomatoes on the side. I chose green matcha noodles for the dish, because green on green is the ultimate green, right. The cherry tomatoes definitely added an interesting taste and a different tone of color for the dish.
The dish overall is good, not yet great. If I have to grade it, I will give it a solid 7. I could have added fried tofu to add more flavour and give the dish another source of protein. It would bring the dish to a good 7.5. One top of that, I will need to learn how to tame the wild bitterness in the Kale. The earthy taste is great but too much of it can make to dish become assertive. I think I will allow the dish to have an 8 when this problem is solved. I don’t want to give it a 9 or 10 yet since I’m sure I will come up with something else crazier to add to the dish.
